ames started his catering career at the early age of 13 working in his uncle’s restaurant in his home town of Carlisle. Finding an appetite for the hospitality trade he then went on to study at Carlisle catering college and found himself working at the three rosette, three red star Rampsbeck Hotel on Ullswater.
In his final year at college he won the Nestlé Toque d'Or Award for outstanding student catering, and also reached the college final of the Gordon Ramsay scholarship. James went on to gain experience at the IMI hospitality university in Lucerne Switzerland and The Johnson and Wales Hospitality University in Rhode Island USA before going to work at Angela Hartnett's Michelin starred The Connaught Hotel in 2004
